  Seitan

Seitan also known as wheat meat or wheat gluten. Seitan can be prepared by using either whole wheat flour or wheat gluten and is made by rinsing away starch in the wheat, leaving high quality protein gluten behind. Seitan contains about 31 grams of protein per 4 ounce serving. Seitan contains low sodium. It is a low carbohydrate, low fat, high protein, firm textured meat protein. Seitan can also be prepared at home by mixing wheat gluten, combining with water and either boiling or baking the mixture. Seitan also provides B complex vitamins. It is very low in unsaturated fats or cholesterol. But seitan is harmful for people prone to celiac disease.
